COTE Korean Steakhouse, the Michelin-starred culinary phenomenon in New York City, has recently unveiled its most ambitious endeavor to date, COTE Vegas, at The Venetian Resort. The inauguration is the inaugural West Coast establishment for Gracious Hospitality Management and serves as a focal point of the resort's extensive $1.5 billion redevelopment. The new restaurant seeks to merge the vibrancy of Korean BBQ with the characteristics of a traditional American steakhouse, a strategy that garnered its New York flagship a Michelin star and the designation of North America’s Best Steakhouse by World’s 101 Best Steak Restaurants.



Founder and CEO Simon Kim, a contender for the James Beard Award, characterized the Las Vegas debut as a homecoming in a statement announcing the opening. “The vibrancy of the Strip, the dazzling lights, and limitless opportunities have always been intrinsic to COTE,” stated Kim, who studied and oversaw restaurants in Las Vegas early in his career.

The 17,000-square-foot area, situated in the resort’s Waterfall Atrium, was crafted by the Rockwell Group, seasoned experts in hospitality, to provide a dramatic ambiance, encompassing an expansive, theater-themed dining room and a luminous center bar.

Executive Chef David Shim supervises a menu that includes COTE’s hallmark Butcher’s Feast—a sequence of four exquisite cuts cooked at the table—alongside rare A5 Wagyu and USDA Prime steaks cured for 120 days. The BlackJack Sandwich, a luxurious offering exclusive to Las Vegas, comprises Kagoshima A5 Wagyu and Périgord black truffle.

The beverage program, directed by four-time James Beard Award candidate Victoria James, has more than 1,200 meticulously selected wine labels. Sondre Kasin, the Global Director of Bars, has introduced cocktails tailored for Las Vegas, such as the Diamonds Are Forever.



The extravagant launch celebration of the Vegas steakhouse on October 3 attracted a distinguished assembly of VIPs, including Nas, Dr. Dre, Anderson .Paak, Havoc, N.O.R.E., Chloe Flower, Steve Aoki, Eva Chow, Soo Joo Park, Mona Matsuoka, DJ Whoo, Shin Lim, Laura Kim, Peter Bittenbender, Rich Paul, and David Rockwell. The debut of Sin City is a crucial component of GHM’s extensive growth, which will feature a second New York COTE facility in 2026.
