Ace Hotel Kyoto Declares Residency of Chef René Redzepi's noma

A 10-week program with the acclaimed and innovative Copenhagen restaurant.

After a 2015 residency in Tokyo and following engagements in Sydney, Australia, and Tulum, Mexico, the internationally acclaimed Copenhagen restaurant, noma, will establish a residence at Ace Hotel Kyoto in collaboration with American Express. Under the direction of Chef René Redzepi, noma will conduct a 10-week engagement (March 15, 2022-May 20, 2023) centered on a tasting menu influenced by the unique ingredients and culinary heritage of the Kyoto region.
Featuring a unique 64-seat dining experience four days a week (Wednesday to Saturday) with one lunch and one dinner session each day, noma’s residency at Ace Hotel Kyoto showcases the spring season. The noma team will procure products from local farmers, hunters, fishmongers, and foragers, enhancing their appreciation of Japanese cuisine and investigating the region.
“I consider Kyoto to be the origin of the Western tasting menu, and it continues to be a pivotal city for comprehending the contemporary fine dining landscape.” A significant portion of my journey and motivation can be distilled into a few pivotal occasions, with my inaugural visit to Japan and Kyoto being one of them. We have consistently desired to revisit and investigate this place as a team. We have been engaged in this particular initiative for the past two years, with a crew on-site since late spring, conducting foraging and research to establish the foundation of our Kyoto menu. Our primary inspiration is from the essence of Kyoto's kaiseki food, despite not being a Japanese restaurant. René Redzepi stated, "We arrive to be inspired, to learn, to assimilate new creative methodologies, and to ideally return with fresh perspectives and a more lucid vision for how to embody noma."

Reservations will commence on November 7 at 7 a.m. EDT through noma’s newsletter. The tasting menu is priced at €475 EUR (about $65 USD) per individual, with an optional beverage pairing available for €300 EUR (roughly $293) per person, with the choice of alcoholic or non-alcoholic options.
