High West Distiller Drops a Limited Cask-Strength Bourbon

High West Distillery has declared the worldwide launch of Cask Strength, a limited-edition amalgamation of pure bourbons intended to attract both experienced whisky aficionados and casual consumers. The 117-proof release is a significant achievement for the Park City, Utah-based distillery, coinciding with Distilling Director Isaac Winter obtaining his Master Distiller Certification after a stringent assessment based on traditional American whiskey-making methods.
“This was an enjoyable combination to assemble,” Winter stated in a communiqué sent by the business. This Cask Strength version, rooted in our high-rye blending philosophy, employs our Bourye blending technique to meticulously harmonise rye-driven spiciness with the richness of malted barley.
The small-batch bourbon comprises a blend of spirits aged from six to twenty years, procured from Indiana, Kentucky, and Tennessee. The whisky was matured in fresh, charred American white oak barrels and bottled at 58.5% ABV. Consistent with the esteemed distillery's reputation for intricacy, the non-chill filtered bourbon showcases a varied mash mix. The Indiana component contains 21% rye, but the Tennessee and Kentucky ratios are designed to provide a base of corn and malted barley.
High West’s tasting notes indicate that the expression begins with scents of butter-poached green apples and honey-glazed cornbread. The palate presents notes of sweet plantains, dried apricots, and Earl Grey Crème tea, culminating in a finish defined by kumquat and white chocolate. Cask Strength is currently available for a recommended retail price of $69.99, subject to availability, via merchants nationwide, the High West Saloon in Park City, and through the distillery’s website.
