What defines optimal cooking?
Optimal cooking is a culinary technique that originated in Peru in 2014, focusing on the utilization of the entire ingredient to enhance flavor, texture, and nutritional value.
It possesses three functions:
Preserving: to cultivate new attributes and extend the longevity of the produce.
Culinary recycling: to utilize more of the element that already contributes to the dish.
Plus product: to identify the distinct components of the ingredient as a product possessing both culinary and nutritional value.
With whom do you partner to enhance your local community?
Ccori operates two educational social initiatives, one of which is 'Kind Kitchens,' where we collaborate with soup kitchens to instruct individuals in 'optimal cuisine' across various regions. Secondly, 'Optimistic Cuisine' involves collaboration with inmates at a prison in Lima, the capital city. We procure all ingredients for our kitchens from local farms.
What is your interpretation of biodiversity, and how is it manifested in your cooking practices?
The utmost respect for biodiversity is to comprehend the path that the item has undertaken to ultimately reach our hands. The optimal method to honor it is to utilize the produce while minimizing waste.
What are the primary challenges now facing the hospitality industry in Peru?
A primary concern in Peru is the escalating food prices, as the climate crisis raises temperatures, leading to diminished agricultural yield. This is a novel challenge for us in Peru, as there has historically been a plenty of vegetables.
Food holds varied significance for individuals; what does it signify for you?
Food represents a form of communication to me. Food enables communication in a manner that words cannot. Food may represent our ultimate growth.
What is the significance of communication and collaboration in contemporary society?
Effective communication and collaboration are essential. While sharing knowledge is crucial, we must exercise caution regarding our focus, as an abundance of information might lead to diminished attention and genuine concentration.
What are your most significant aspirations for the future?
I envision a world in which all individuals have the opportunity to develop and understand how to optimize their resources in harmony with their surroundings.
What has been your most favored meal and what is the reason for your preference?
A memorable lunch occurred when my younger brother and I accompanied our father to a brewery. At twelve and six years old, we consumed our first beer, subsequently proceeding to the workers' dining room for a dish of coq au vin. Only one to convey. My father informed us that the most exceptional dinner is one shared with others.
