A Caviar and Oyster Bar Launches at The Maybourne Beverly Hills

Following the success of its sold-out Alinea Beverly Hills residency featuring three-Michelin-starred Chef Grant Achatz, The Maybourne Beverly Hills is once again establishing a new culinary benchmark in 90210.

This September, the hotel introduces its latest innovation: a Caviar and Oyster Bar concept within the stylish, dimly lit Maybourne Bar. Intimate, fashionable, and entirely distinctive to the area, it is the sole specialized caviar and oyster bar in Beverly Hills.
The bar's metamorphosis is centered around a hand-carved crème-and-tan marble counter accompanied by five striking blue stools, establishing an ambiance of sophisticated luxury. Under the guidance of Executive Chef Damon Gordon, the new initiative presents an omakase-style sampling that leads diners through a spectrum of flavors, from savory to sweet. Notable offerings comprise the Truffled Deviled Egg reinterpreted with N25 (the inaugural presentation in California of the renowned caviar), Compressed Watermelon infused with vodka and powdered lime, a Schrenkii Caviar Burger featuring layers of salmon and horseradish-apple remoulade, and a whimsical conclusion of Vanilla Ice Cream accompanied by Sea Salt, Olive Oil, and Caviar. A meticulously designed oyster menu enhances the experience, featuring the delicate “En Gelée” with sake and green apple, alongside the sophisticated Rockefeller with confit fennel, creamed spinach, and aged parmesan.

To commemorate the launch, The Maybourne will conduct an exclusive Caviar Masterclass on September 18, facilitated by N25 creator Hermes Gehnen and accompanied by a selection of Billecart-Salmon champagnes. The subsequent evening, the festivities persist with a singular Caviar, Oyster & Billecart-Salmon Dinner in the Chef’s Table dining area – a seven-course culinary experience intended to highlight the subtleties of N25 alongside oysters sourced fresh from both coasts. In addition to the opening, the hotel will unveil a customized caviar cart and caviar butler services for weddings, special events, and festivities.
