Clare Smyth To Launch Coreucopia—A Chelsea Bistro

Clare Smyth, the chef of the esteemed three-Michelin-starred restaurant Core in Notting Hill, is returning with a thrilling new venture. Corenucopia is scheduled to open in November 2025.

Currently, the information is limited; nevertheless, it is confirmed that Corenucopia will debut at the location formerly occupied by Tabisca on Holbein Place, a steakhouse that ceased operations earlier this year. Earlier this year, Smyth informed C&TH: ‘We are inaugurating a new luxury bistro adjacent to Sloane Square - a more casual environment, yet nonetheless grounded in quality and exquisite ingredients.’
During her appearance on Annoushka Ducas’ Life in Charms podcast, Smyth stated that it will provide 'more traditional cuisine', predominantly British with some French influence, along with a 'exceptional wine selection'. She also stated that the interior will be 'exceedingly comfy' with 'ornate, exquisite plates'.
The name is a pun on the term cornucopia (with an added 'e' to incorporate her 'Core' brand), representing abundance and sustenance (often a horn-shaped vessel). Smyth states, "We will exert all our efforts towards it." “It will be abundant, opulent, and lavish.”
She states: ‘The exquisite complement of a highly inventive restaurant, however one occasionally desires a simply grilled Dover sole, accompanied by a lemon meringue pie or a type of rice pudding.’
Waldorf Astoria London Admiralty Arch
Smyth is now engaged in more fresh openings. This year, she was designated as the chef partner for the new Waldorf Astoria London Admiralty Arch hotel, in collaboration with French-American chef Daniel Boulud.
Scheduled to inaugurate in 2026, the hotel will occupy one of London's most emblematic structures, offering vistas along the Mall towards Buckingham Palace. Two restaurants will be inaugurated within the hotel: one located within the building's triple arches and the other on the rooftop; however, the allocation of chefs to each establishment remains undetermined.
Smyth was raised on a farm in County Antrim and developed an early interest in gastronomy. “Life was uncomplicated, characterized by diligent labor, and it imparted knowledge about the origins of food,” she conveyed to us. “We were surrounded by fresh produce, and my mother prepared all meals from scratch—simple dishes made with affection that influenced my current perspective on food.”
At the age of 16, she relocated to England and subsequently worked for 13 years under Gordon Ramsay, including a tenure as chef patron of the three-Michelin-starred Restaurant Gordon Ramsay.
In 2017, Smyth established her own restaurant: Core by Clare Smyth. It rapidly attained critical recognition, earning two Michelin stars in 2018 and a third in 2020, establishing Smyth as the first British woman to operate a three-Michelin-starred restaurant. She received the title of World’s Best Chef at the 2018 World’s 50 Best Restaurants awards.

Core exemplifies Smyth's ingredient-centric, vegetable-first ethos, utilizing exclusively British-sourced produce throughout the restaurant. Tasting menus vary with the seasons; nonetheless, certain characteristic dishes remain, such as the lamb carrot and the potato with roe.
Smyth, in addition to Core, possesses a restaurant in Sydney named Oncore. Inaugurated in 2021, following delays caused by Covid, it is located on the 26th story of the Crown Tower, offering vistas of Sydney Harbour. This establishment also achieved immediate acclaim, receiving three hats from the Good Food Guide, a grading system in Australia analogous to the Michelin Guide.
Smyth recently appeared in season two of With Love, Meghan, having previously acquainted himself with Meghan Markle while overseeing the culinary arrangements for her wedding to Prince Harry. In the program, she showcases her hallmark poached California halibut meal and her preferred green juice recipe.
