GAIL’s Bakery Classic Scones Recipe

Makes around 12 big scones

Ingredients
200g butter, chilled and diced
720g plain flour
1⁄2 tsp fine sea salt
3 tbsp baking powder
140g caster sugar
3 eggs
160ml milk
Egg wash
Instruction
Preheat the oven to 170 degrees Celsius.
Sift 720g of all-purpose flour, 1/2 teaspoon of fine sea salt, and 3 teaspoons of baking powder into a large basin. Add 200g of cubed butter and incorporate it into the mixture by rubbing. Finally, include 140g of caster sugar.
Combine 160ml of milk and 3 eggs in a jug, then incorporate this combination into the flour blend while stirring continuously.
Flatten the dough into a square, approximately 3–4cm thick, and cut out circular shapes with a diameter of about 8cm.
Acquire approximately twelve large scones.
Apply a light coating of egg wash to the tops and bake for approximately 20 minutes until they have risen and golden.
