Grilled Peach & Halloumi Salad

This is a genuine summer favorite dish. When peaches are ripe and in season, nothing surpasses their pairing with tart halloumi grilled to perfection.

Eat it immediately after cooking the halloumi and peaches, since it is most flavorful when served slightly warm.
Serves 4 – 6 as a side dish
Ingredients
250gm block halloumi cut into thick slices
3 ripe but firm peaches
A small bag of wild rocket
A small handful of torn mint leaves
Olive oil
Juice of ½ lemon
A pinch of chilli flakes
Instruction
Preheat a ridged grill pan.
Halve the peaches and extract the pit. Subsequently, bisect once more to yield 12 pieces.
Preheat the grill pan thoroughly; if it is not sufficiently heated, food will adhere to its surface. Begin with grilling the peach quarters, followed by the halloumi. Position the arugula on the serving platter's base and garnish with the peaches and halloumi. Extract the juice from the lime, sprinkle with olive oil, and disperse the mint leaves and chili flakes.
