HISASHI SUSHI Emerges in Omotesando, Extending the Michelin-Starred Udatsu Lineage

The Tokyo debut introduces a reimagined Edomae sushi journey, where culinary technique meets dynamic artistic expression.

The HISASHI SUSHI restaurant has officially opened in Omotesando, introducing a novel approach to traditional eating within Tokyo's culinary landscape. Under the supervision of Hisashi Udatsu, the visionary of Nakameguro’s acclaimed Michelin-starred Udatsu Sushi, the new venue aims to encapsulate the city's rapidity and nuance within a contemporary culinary experience.

The brand, guided by the principle of “TOKYO CODE. EDOMAE WISDOM,” transforms sushi into a manifestation of “Dynamic Art.” The environment incorporates street sensibilities, premium aesthetics, and urban momentum instead of merely depending on superficial Japanese aesthetics. The essence of the menu emphasises a fundamental sense of "rhythm," harmonising stillness and movement within the environment, service, and culinary presentation to forge a distinct, modern Tokyo expression. Store manager Tomohiro Yanase observes that the establishment seeks to preserve the traditions of its predecessor while fostering a novel experience for its consumers.

Meticulous consideration of ingredients is essential. The fundamental shari (sushi rice) employs organic rice sourced from Kumamoto, cultivated with the purified natural waters of Aso. This base is meticulously seasoned with vinegar from Kyoto's Iio Jozo, agave powder, and Mataichi salt from Itoshima to achieve an optimum melt-in-the-mouth quality. The flavour characteristics are augmented by a distinctive nikiri glaze composed of Itoshima’s Mitsuru soy sauce and artisanal salt derived from saltwater sourced directly from fishermen. The establishment accommodates 23 patrons, with 19 counter seats and three standing areas, and offers both à la carte selections and multi-course meals for local and international clientele. HISASHI SUSHI will officially inaugurate on April 15, with reservations accessible by phone, OMAKASE, and Tabelog.
