Noma - The Quintuple Recipient Of The World's Best Restaurant Accolade, Is Ceasing Operations

The esteemed and iconic Danish restaurant will cease operations in Copenhagen at the conclusion of 2024.

One of the premier gastronomic experiences will cease operations in 2024. Noma, situated in Copenhagen and repeatedly rated as the world's best restaurant, is acclaimed for pioneering New Nordic Cuisine. Noma has been ranked first in the World’s 50 Best Restaurants five times, most recently in 2021 during the pandemic.
Noma, established 20 years ago by chef and proprietor René Redzepi, has gained recognition for its recipes that utilise locally foraged vegetables. Chef René Redzepi has established Noma as a three-Michelin-star destination in Copenhagen, offering game-inspired delicacies such as reindeer brain custard with bee pollen and fermented rice ice cream with oyster caramel. Noma declared in a statement on their website,
“Winter 2024 will be the last season of noma as we know it. We are beginning a new chapter; noma 3.0.”
The team indicated that commencing in 2025, the restaurant will undergo a transformation into “a vast laboratory – an innovative test kitchen focused on food innovation and the creation of new flavours, which will disseminate the results of our endeavours more broadly than ever.” Noma appears to be embracing its inventive endeavours by concentrating on disseminating its culinary skills globally. The "next phase," as stated on the website, will involve the crew traversing the globe to acquire information on novel concepts and flavours. Although the physical restaurant may cease operations after 2024, Noma intends to continue delivering coveted flavours to Copenhagen in an unspecified season. They intend to continue providing visitors with some of the world's finest culinary experiences; yet, "being a restaurant will no longer define us." Rather, a significant portion of our work will be dedicated to investigating new ventures and cultivating more ideas and products. The statement culminates with their mission.
